What is the Glycemic Index?
The Glycemic Index (or “GI”) is a numerical system measuring the rise in blood sugar that a carbohydrate triggers – the higher the number, the greater the blood sugar response. You want to aim for a low GI so that you do not raise, or spike, your blood sugar levels too much. A low GI food will cause a small rise, while a high GI food will trigger a dramatic spike. A GI of 70 or more is HIGH, a GI of 56 to 69 inclusive is medium, and a GI of 55 or less is LOW. Xagave is a VERY LOW Glycemic Index food, approximately 30 on the GI scale.

When you eat, your body breaks food down into sugar that it uses as energy. This sugar is either used as energy to fuel your body’s activity or is stored as fat for later use. High GI foods such as table sugar, honey, and high fructose corn syrup require very little processing, so if the body does not need the energy, the energy is quickly stored as fat for use at a later time. These high GI sweeteners provide an immediate burst of energy similar to gas on a fire, but once the fuel has been stored as fat, you begin to feel lethargic and hungry and you “burn out.” The hunger causes you to eat more high GI foods to get the energy back (like a drug and that “high” feeling) and the cycle begins all over again. This cycle is the cause of overeating and over consumption of calories. This is why sitting at your desk and eating a candy bar or drinking soda sweetened with high fructose corn syrup is a bad idea. It is a short-term fix with long-term results of low energy levels and obesity.
